Serves 8
Ingredients:
- 3-3.5 cups shredded kohlrabi (approximately 3/4-1 pound, 3 small or 1 large/1 small bulb)
- 1 cup shredded carrots
- 1 extra-large apple shredded
- 1/4 bunch of chives, minced
- 1/4 bunch of parsley, leaves and stem, minced
- 2 cups roughly chopped pecans
- 1 1/4 cup dried cranberries
- 4 Tbsp olive oil
- 1/3 cup honey ginger vinegar (Bloomington Olive Oil Company)
- 1.5 Tbsp dijon mustard
- 1/2 tsp kosher salt
Directions:
- Mix all ingredients together. You may consume it, immediately, however, the flavors blend and improve after sitting overnight.
