Serves: 14-16
Ingredients:
- 1 cup flour
- ¼ cup butter, softened
- ⅔ cup sugar
- 2 eggs
- 2 tablespoons milk
- 8 oz apple butter
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 4 bananas
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- 1 cup of roughly chopped pecans (optional)
Directions:
- Cream the butter and sugar together. Add the eggs and beat until well blended. Add in the bananas, milk, and vanilla.
- Mix flour, baking powder, salt, baking soda, and pecans in a separate bowl. Add dry ingredients to the wet ingredients and mix well.
- Fill the bottom of each muffin cup with just enough batter to completely cover the bottom. Add 1 Tablespoon of apple butter into each muffin cup then cover over the apple butter and add enough batter to fill each cup to 1/8 – 1/4 inch below the rim.
- Bake at 325 degrees for 20 to 25 minutes.
