Banana Surprise (Apple Butter) Muffins

Serves: 14-16

Ingredients:

  • 1 cup flour
  • ¼ cup butter, softened
  • ⅔ cup sugar
  • 2 eggs
  • 2 tablespoons milk
  • 8 oz apple butter
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 4 bananas
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 cup of roughly chopped pecans (optional)

Directions:

  1. Cream the butter and sugar together. Add the eggs and beat until well blended. Add in the bananas, milk, and vanilla.
  2. Mix flour, baking powder, salt, baking soda, and pecans in a separate bowl. Add dry ingredients to the wet ingredients and mix well. 
  3. Fill the bottom of each muffin cup with just enough batter to completely cover the bottom. Add 1 Tablespoon of apple butter into each muffin cup then cover over the apple butter and add enough batter to fill each cup to 1/8 – 1/4 inch below the rim. 
  4. Bake at 325 degrees for 20 to 25 minutes.
