Serves 4-6
Ingredients:
- 2 cups shredded watermelon rind
- 1 pound asian pear, finely chopped
- 9 shiso leaves, minced
- 1 large sweet pepper, finely chopped
- 6 medium shallots, diced
- 1 large purple onion, finely chopped
- olive or avocado oil for sautéing
- 3 Tbsp lime juice
- 1.25 tsp sea salt
- freshly ground black pepper to taste
- Optional ingredients
- Hot peppers: 6 black hungarian (mild heat) or 2 sugar rush peach peppers (medium heat), minced
- Feta cheese
Directions:
- Remove and compost the green peel from the watermelon. Cut off the red portion of the watermelon to munch on while making the slaw. Shred two cups of the white rind in a food processor.
- Sauté red onion in oil until almost caramelized. Add minced shallots and cook until softened.
- Mix rind, pear, shiso, peppers (sweet and optional hot), sautéed shallots and onions together.
- Add lime juice, salt and black pepper.
- Sprinkle some feta cheese onto each serving.
