Curried Celery and Onions

Serves X-XX

Ingredients:

  • 6 garlic cloves, minced
  • 8-10 celery stalks and leaves, chopped into bite size pieces
  • 1 large yellow onion, chopped
  • 2 tsp curry powder
  • 2 Tbsp honey
  • 2 Tbsp dijon mustard
  • 1/2-1 tsp ground black pepper
  • Salt to taste
  • Olive oil for sautéing

Directions:

  1. Sauté onions in olive oil until lightly caramelized. Add garlic and cook for an additional 5 minutes. 
  2. Add one cup of water to the pan along with the chopped celery and its leaves. Bring to a simmer and then add the rest of the ingredients. Cook until the celery is soft and tender.
