Borage Chimichurri Sauce

Serves X-XX

Ingredients:

  • 1/2 cup water
  • 1 teaspoon salt
  • 6 garlic cloves minced.
  • 1 cup borage (leaves only)
  • 1/2 cup fresh oregano leaves (or 2 tsp. dried)
  • 1 medium-size red serrano pepper or 1 teaspoon ground cayenne pepper
  • 1/4 cup sherry vinegar
  • 1/2 cup olive oil

Directions:

  1. Boil 1/2 cup of water to dissolve the 1 teaspoon of salt. Once the salt is dissolved, let the water cool.
  2. Sauté minced garlic cloves in olive oil until golden brown.
  3. Add all ingredients, but the olive oil, into a food processor and puree.
  4. Pour in olive oil and mix for 30 seconds.
  5. Allow the sauce to marinate for a few hours before serving.
