Roasted Zucchini Dressed with Sage, Parsley and Chives

Serves 4

Ingredients:

  • 4 8-12 oz zucchini
  • Olive or avocado oil
  • 1 cup finely chopped sage
  • 1 cup minced chives
  • 1 cup cup finely chopped parsley leaves and thin stems
  • 1 cup parmesan cheese

Directions:

  1. Slice zucchini in half and scrape out seeds.
  2. Cut into 1/2 inch half moons.
  3. Spray or baste zucchini with olive or avocado oil. Lightly salt. Roast at 375 F until golden brown.
  4. Meanwhile, sauté chives, sage, and parsley together in olive or avocado oil until browned. Cool. Once cool, mix with parmesan cheese. Sprinkle mixture on top of zucchini half moons.
