Serves 6-8
Ingredients:
- Dressing
- 1/4 cup walnut oil
- 1/4 cup olive oil
- 3 Tbsp sherry vinegar
- 5 medium size garlic gloves, minced
- 1 tsp Dijon mustard
- 1/4 tsp salt
- Salad
- 1 cup of walnuts, coarsely chopped
- 2 pounds of green beans, ends trimmed
- salt and pepper to taste
Directions:
- Steam or cook green beans in boiling water for 10 minutes until tender. Remove from water and let cool.
- Toast walnuts in toaster oven for 5 minutes until lightly toasted. Mix with beans.
- Sauté minced garlic in olive oil until lightly caramelized.
- Add sautéed garlic to the rest of the dressing ingredients. Blend ingredients together with an immersion blender until emulsified.
- Pour dressing over the green bean walnut mixture. Add salt and pepper to taste.
- Serve warm.
