Toasted Green Bean Salad

Serves 6-8

Ingredients:

  • Dressing
  • 1/4 cup walnut oil
  • 1/4 cup olive oil
  • 3 Tbsp sherry vinegar
  • 5 medium size garlic gloves, minced
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • Salad
  • 1 cup of walnuts, coarsely chopped
  • 2 pounds of green beans, ends trimmed
  • salt and pepper to taste

Directions:

  1. Steam or cook green beans in boiling water for 10 minutes until tender. Remove from water and let cool.
  2. Toast walnuts in toaster oven for 5 minutes until lightly toasted. Mix with beans.
  3. Sauté minced garlic in olive oil until lightly caramelized.
  4. Add sautéed garlic to the rest of the dressing ingredients. Blend ingredients together with an immersion blender until emulsified. 
  5. Pour dressing over the green bean walnut mixture. Add salt and pepper to taste. 
  6. Serve warm.
