Serves 6
Ingredients:

- 6-7 small/mini cucumbers
- 6-8 slices bacon, cooked and crumbled, minced
- 8 ounces cream cheese, softened
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 bunch of chives, minced
Directions:
- Cook the bacon. Set aside to cool, then crumble finely.
- Wash and dry the cucumbers. Peel or leave the peel intact.
- Cut off the ends of cucumber, which are bitter.
- Cut them in half lengthwise.
- Use a small spoon to scoop out the seeds, then pat the insides dry with a towel.
- In a small mixing bowl, combine the cream cheese, minced chives, garlic powder, onion powder, salt and pepper. Mix well using a hand mixer or spoon.
- Divide the cream cheese mixture evenly among the cucumbers.
- Sprinkle with crumbled bacon and minced chives.
