Cucumber Boats with Bacon and Chives

Serves 6

Ingredients:

  • 6-7 small/mini cucumbers
  • 6-8 slices bacon, cooked and crumbled, minced
  • 8 ounces cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 bunch of chives, minced

Directions:

  1. Cook the bacon. Set aside to cool, then crumble finely.
  2. Wash and dry the cucumbers. Peel or leave the peel intact.
  3. Cut off the ends of cucumber, which are bitter.
  4. Cut them in half lengthwise.
  5. Use a small spoon to scoop out the seeds, then pat the insides dry with a towel.
  6. In a small mixing bowl, combine the cream cheese, minced chives, garlic powder, onion powder, salt and pepper. Mix well using a hand mixer or spoon.
  7. Divide the cream cheese mixture evenly among the cucumbers.
  8. Sprinkle with crumbled bacon and minced chives.
