Ingredients:
- 6 garlic cloves, minced
- 8-10 celery stalks and leaves, chopped into bite size pieces
- 1 large yellow onion, chopped
- 2 tsp curry powder
- 2 Tbsp honey
- 2 Tbsp dijon mustard
- 1/2-1 tsp ground black pepper
- Salt to taste
- Olive oil for sautéing
Directions:
- Sauté onions in olive oil until lightly caramelized. Add garlic and cook for an additional 5 minutes.
- Add one cup of water to the pan along with the chopped celery and its leaves. Bring to a simmer and then add the rest of the ingredients. Cook until the celery is soft and tender.
