Kohlrabi Slaw

Serves 8

Ingredients:

  • 3-3.5 cups shredded kohlrabi (approximately 3/4-1 pound, 3 small or 1 large/1 small bulb)
  • 1 cup shredded carrots
  • 1 extra-large apple shredded
  • 1/4 bunch of chives, minced
  • 1/4 bunch of parsley, leaves and stem, minced
  • 2 cups roughly chopped pecans
  • 1 1/4 cup dried cranberries
  • 4 Tbsp olive oil
  • 1/3 cup honey ginger vinegar (Bloomington Olive Oil Company)
  • 1.5 Tbsp dijon mustard
  • 1/2 tsp kosher salt

Directions:

  1. Mix all ingredients together. You may consume it, immediately, however, the flavors blend and improve after sitting overnight.
