Serves X-XX
Ingredients:
- 1 lb okra, 1 lb green beans, or 1/2 lb of each, cut into bite size pieces
- Avocado or olive oil
- 2 cups diced tomatoes (remove the seeds)
- 2 cups chopped white or yellow onions
- 1/3 cup diced hot pepper (recommending hungarian, jalapeño, or aji habanero)
- 1/2 tsp turmeric
- 4 tsp curry powder
- Kosher salt and freshly ground pepper to taste
Directions:
- Warm oil in skillet on medium. Add onions and cook until softened. Add diced hot peppers and cook for another 5 minutes. Remove from pan and set aside.
- To the same skillet, heat more oil to medium high. Once oil is hot, add okra and/or green beans and stir-fry for 10 -15 minutes or until golden brown.
- Add diced tomatoes (including some juice of the tomatoes is recommended), cook for 5-7 minutes.
- Add cooked onion/hot pepper mixture and spices. Cook for an additional 3 minutes.
- Salt and pepper to taste.
