Hot Curried Okra/Green Beans with Tomatoes and Onions

Serves X-XX

Ingredients:

  • 1 lb okra, 1 lb green beans, or 1/2 lb of each, cut into bite size pieces
  • Avocado or olive oil
  • 2 cups diced tomatoes (remove the seeds)
  • 2 cups chopped white or yellow onions
  • 1/3 cup diced hot pepper (recommending hungarian, jalapeño, or aji habanero)
  • 1/2 tsp turmeric
  • 4 tsp curry powder
  • Kosher salt and freshly ground pepper to taste

Directions:

  1. Warm oil in skillet on medium. Add onions and cook until softened. Add diced hot peppers and cook for another 5 minutes. Remove from pan and set aside.
  2. To the same skillet, heat more oil to medium high. Once oil is hot, add okra and/or green beans and stir-fry for 10 -15 minutes or until golden brown.
  3. Add diced tomatoes (including some juice of the tomatoes is recommended), cook for 5-7 minutes. 
  4. Add cooked onion/hot pepper mixture and spices. Cook for an additional 3 minutes. 
  5. Salt and pepper to taste.
