Serves 4-6
Ingredients:
- 8 oz yard long beans
- 1 1/2 cups fine breadcrumbs (panko)
- 1/2 cup grated parmesan
- 1 tsp onion powder
- 1/2 tsp cayenne powder
- 2 large eggs
- 1 Tbsp milk
- 1/2 cup flour
Directions:
- Cut yard long beans into bite size pieces or tie thin beans into knots (beans at room temperature tie better).
- Mix breadcrumbs, parmesan, onion and cayenne powder together in a bowl.
- Whisk eggs and milk together in a second bowl.
- Dust beans with 1/2 cup of flour.
- Paint curly yard-long beans with egg mixture or toss chopped beans with egg mixture. Make sure all sides of beans are coated.
- Toss the curly yard-long beans into the bread mixture, coating all sides. Or add the bread mixture in with chopped yard-long beans and stir until the coating is evenly distributed.
- Transfer to a baking pan lined with parchment paper.
- Spray with baking oil, recommend avocado oil infused with garlic.
- Evenly salt and pepper the beans.
- Cook at 400 F until golden brown, 15-25 minutes.
