Baked Yard-Long Bean Curly French Fries

Serves 4-6

Ingredients:

  • 8 oz yard long beans
  • 1 1/2 cups fine breadcrumbs (panko)
  • 1/2 cup grated parmesan
  • 1 tsp onion powder
  • 1/2 tsp cayenne powder
  • 2 large eggs
  • 1 Tbsp milk
  • 1/2 cup flour

Directions:

  1. Cut yard long beans into bite size pieces or tie thin beans into knots (beans at room temperature tie better).
  2. Mix breadcrumbs, parmesan, onion and cayenne powder together in a bowl.
  3. Whisk eggs and milk together in a second bowl. 
  4. Dust beans with 1/2 cup of flour.
  5. Paint curly yard-long beans with egg mixture or toss chopped beans with egg mixture. Make sure all sides of beans are coated.
  6. Toss the curly yard-long beans into the bread mixture, coating all sides. Or add the bread mixture in with chopped yard-long beans and stir until the coating is evenly distributed.
  7. Transfer to a baking pan lined with parchment paper.
  8. Spray with baking oil, recommend avocado oil infused with garlic.
  9. Evenly salt and pepper the beans.
  10. Cook at 400 F until golden brown, 15-25 minutes.
