Three Bean Salad

Serves 8-12

Ingredients:

  • 2.5 cups yard long beans cut into 1-inch pieces
  • 2.5 cups mixed green and purple beans cut into 1-inch pieces
  • 2 cups (or one can) garbanzo beans, black beans or kidney beans
  • 1 cup colored sweet pepper chopped into small pieces
  • 1/2 cup finely chopped red onion
  • 1 cup chopped walnuts
  • 1 tsp garlic clove minced
  • 1/2 cup white wine vinegar
  • 1/4 cup walnut oil (or your choice of oil)
  • 2 Tbsp coconut sugar
  • 1/2 tsp celery seed
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • black pepper to taste

Directions:

  1. Mix the first seven ingredients together (beans through garlic)
  2. In a screw top jar with lid, add the oil, vinegar and spices. Shake until mixed well.
  3. Pour over vegetable, bean, nut medley and mix.
  4. Chill 2 hours or more before eating.
