Serves 8-12
Ingredients:
- 2.5 cups yard long beans cut into 1-inch pieces
- 2.5 cups mixed green and purple beans cut into 1-inch pieces
- 2 cups (or one can) garbanzo beans, black beans or kidney beans
- 1 cup colored sweet pepper chopped into small pieces
- 1/2 cup finely chopped red onion
- 1 cup chopped walnuts
- 1 tsp garlic clove minced
- 1/2 cup white wine vinegar
- 1/4 cup walnut oil (or your choice of oil)
- 2 Tbsp coconut sugar
- 1/2 tsp celery seed
- 1/2 tsp salt
- 1/2 tsp dry mustard
- black pepper to taste
Directions:
- Mix the first seven ingredients together (beans through garlic)
- In a screw top jar with lid, add the oil, vinegar and spices. Shake until mixed well.
- Pour over vegetable, bean, nut medley and mix.
- Chill 2 hours or more before eating.
