Serves 4
Ingredients:
- 4 8-12 oz zucchini
- Olive or avocado oil
- 1 cup finely chopped sage
- 1 cup minced chives
- 1 cup cup finely chopped parsley leaves and thin stems
- 1 cup parmesan cheese
Directions:
- Slice zucchini in half and scrape out seeds.
- Cut into 1/2 inch half moons.
- Spray or baste zucchini with olive or avocado oil. Lightly salt. Roast at 375 F until golden brown.
- Meanwhile, sauté chives, sage, and parsley together in olive or avocado oil until browned. Cool. Once cool, mix with parmesan cheese. Sprinkle mixture on top of zucchini half moons.
