Herbalicious Buttered Almond Green Beans

Serves 4

Ingredients:

  • 12 oz petite green beans
  • 3/4 cup almonds
  • Butter or olive oil
  • 3 Tbsp minced garlic
  • 1 cup minced chives
  • 1/8 – 1/4 cup fresh summer savory leaves
  • 1 cup chopped lime basil or traditional basil leaves
  • 1/2 cup French sorrel leaves chopped

  2. Coarsely chop almonds and sauté in butter or butter alternative such as Coconut Earth Balance for 10-15 minutes. Remove from heat and set aside.
  3. In the same pan, add more butter. Sauté garlic for 5 minutes. Then add chives, summer savory, (lime) basil and sorrel. Sauté for 5 additional minutes.
  4. Mix steamed green beans, sautéed almonds and herbs together.
  5. Salt and pepper to taste.
