Sole or Salmon with Tangy Cucumber Sauce

Serves X-XX

Ingredients:

  • 1 cup peeled, deseeded, and cubed cucumber
  • 3/4 cup sour cream
  • 2 Tbsp. horseradish
  • 2 Tbsp. fresh or dried dill minced
  • 3 Tbsp. fresh chives diced
  • 1 1/2 tsp lemon juice
  • 1/8 tsp salt
  • 1/4 tsp ground pepper

Directions:

  1. Mix all ingredients together.
  2. Put in fridge to chill for at least 30 minutes.
  3. Steam, bake or grill your fish (1.5 pounds) of your choice.
  4. Add the topping after the fish is finished cooking.
