Jalapeno Kabobs

Serves 4

Ingredients:

  • Bacon – one package with 8 pieces
  • 8oz pkg. cream cheese 
  • 16 jalapeños 
  • 4-6 stalks of celery
  • 1-2 stalks of rhubarb
  • 1/2 pound asian pears or 32 ground cherries

Directions:

  1. Cut bacon into 4ths.
  2. Remove stem of jalapeños
  3. Slice jalapeños length-wise in half. Remove the seeds and ribs.
  4. Spread and fill each jalapeño half with cream cheese.
  5. Push a toothpick through the bottom of each jalapeño.
  6. Add bacon, then celery and/or rhubarb, and top off with a chunk of asian pear or ground cherry.
  7. Cook at 375 until jalapeños wrinkle.
