Pesto

Serves 4

Ingredients:

  • 2 large garlic cloves or one bunch of chives, minced
  • ⅔ cup pine nuts, walnuts or pecans
    • 2 cups of basil, borage, or sorrel leaves, no stems OR 4 cups of a dark, leafy green and stems, chopped steamed
  • ⅓ cup extra-virgin olive oil
  • ¼ teaspoon coarse salt
  • ½ cup grated Parmigiano Reggiano cheese (optional)

Directions:

  1. Sauté garlic on medium low until softened, 5-7 minutes.
  2. Place garlic, nuts, & leaves into a food processor and process until pureed. Add olive oil and salt and process until creamy.
  3. Stir in the parmesan cheese (optional).
